Avocado Brownies (GF, DF, V)



I love making these brownies because one, I am obsessed with avocado, and two, they are so moist and gooey!! Such a great way to indulge in delicious fudgy brownies while adding in nutrients and not having to deal with the side effects of processed sugar, gluten, and dairy. WOOHOO!


INGREDIENTS:

  • 1 ripe Avocado

  • 2 Eggs Or Flax Eggs

    • Vegan Option - Flax Eggs: Combine 1 Tbsp flaxseed meal with 2 1/2 Tbsp water and allow it to sit for 8-10 Minutes to thicken.

  • 1/2 tsp Vanilla Extract

  • 1/2 cup Coconut Sugar

  • 3 tbsps Ghee or Coconut Oil

  • 1/2 cup Almond Flour

  • 1/2 cup Cacao Powder (or cocoa powder)

  • 1 tsp Baking Soda

  • 1/2 tsp Sea Salt

  • 1/3 cup Dark Chocolate Chips




INSTRUCTION:

  • Preheat the oven to 350ºF

  • In a food processor or blender, combine the avocado, eggs, vanilla, coconut sugar, and ghee.

  • Then add in the almond flour, baking soda, cacao powder, and salt.

  • Process again until combined.

  • Mix in the chocolate chips. (Save some to top them off with!)

  • Line a pan with parchment paper

  • Pour batter into the pan and smooth the top-down

  • Optional: top chocolate chips and walnuts

  • Bake for 17-20 Minutes

  • Remove from the oven and let cool before slicing.
