I love making these brownies because one, I am obsessed with avocado, and two, they are so moist and gooey!! Such a great way to indulge in delicious fudgy brownies while adding in nutrients and not having to deal with the side effects of processed sugar, gluten, and dairy. WOOHOO!
INGREDIENTS:
1 ripe Avocado
2 Eggs Or Flax Eggs
Vegan Option - Flax Eggs: Combine 1 Tbsp flaxseed meal with 2 1/2 Tbsp water and allow it to sit for 8-10 Minutes to thicken.
1/2 tsp Vanilla Extract
1/2 cup Coconut Sugar
3 tbsps Ghee or Coconut Oil
1/2 cup Almond Flour
1/2 cup Cacao Powder (or cocoa powder)
1 tsp Baking Soda
1/2 tsp Sea Salt
1/3 cup Dark Chocolate Chips
INSTRUCTION:
Preheat the oven to 350ºF
In a food processor or blender, combine the avocado, eggs, vanilla, coconut sugar, and ghee.
Then add in the almond flour, baking soda, cacao powder, and salt.
Process again until combined.
Mix in the chocolate chips. (Save some to top them off with!)
Line a pan with parchment paper
Pour batter into the pan and smooth the top-down
Optional: top chocolate chips and walnuts
Bake for 17-20 Minutes
Remove from the oven and let cool before slicing.
