Cauliflower Tacos

I made these tacos from the Inflammation Spectrum by Dr. Will Cole the other night and they were AMAZING! I had to mix up the ingredients/cooking process a bit and thought I'd share! They were also fast and easy make.

What you need:

  • 1/2 Cup sun-dried tomatoes

  • 2 Cups Cauliflower

  • 1 Cup of Walnuts

  • 1/4 cup Pumpkin seeds

  • 2 Garlic cloves, minced

  • 1 tsp ground cumin

  • 2 tsp chili powder

  • 1/2 tsp smoked paprika

  • 1/2 tsp kosher salt

  • 1 avocado -- halved, pitted, sliced

  • Salsa

  • Cilantro

  1. A food processor is suggested, however, I do not have one so I just used a Nutribullet to grind everything up.

  2. Combine cauliflower, walnuts, pumpkin seeds, tomatoes, garlic, cumin, paprika and salt. If you are using a Nutribullet, use the tomato water as a base for it to work!

  3. If you do have a food processor, drain the tomatoes when combining... Then mix in 1 tablespoon of tomato water. Process until the mixture resembles 'small peas'.

  4. Place the mixture onto a baking sheet.

  5. Bake for 20 Minutes/Until tender and browned.

  6. Serve taco filling in lettuce wraps; top with avocado, salsa, and cilantro!
